Alliums

Alliums such as garlic, onions, leeks and chives are foods with excellent medicinal value:

  • They contain flavonoids that help stimulate the production of glutathione which is the liver’s most potent antioxidant. 
  • Alliums, which have high sulfur content, help eliminate toxins and carcinogens which can help prevent cancer, reduce inflammation, and help fight infections. 
  • Alliums contain large amounts of fermentable fiber.
  • Raw garlic has a very high antimicrobial value and it is estimated that one clove of freshly crushed garlic has the antibiotic value of 100,000 units of penicillin. (Cooked garlic is not as effective.) Use freshly crushed garlic as an anti fungal (yeast infections, ear infections, fungus on the skin and scalp, etc). It can be used internally and topically.

How to Add Alliums to Your Diet: 
  • Get into the habit of sprinkling chopped scallions or chives as a garnish to add flavor to your food. 
  • Crush your garlic ahead of time and store in your refrigerator in a glass container with olive oil.
  • Start adding freshly crushed garlic as a condiment to your foods and salad dressing
  • Chop your onions ahead of time and store in your refrigerator in a glass container with vinegar and salt.

 

How to Caramelize Onions:
  • Slice one large red or yellow onion
  • Sauté slowly in a teaspoon of fat
  • Stir often 
  • Season with salt and pepper 
  • Cook until the onion turns golden
What to do with a pan of sautéed onions and garlic:
  • Add chopped kale or chard and sauté all together.
  • Add carrots and ginger and vegetable stock and cook for 25 minute- puree in the blender for soup.
  • Add broccoli and or cauliflower and ¼ cup of stock, place a lid on the pan and steam for 10 minutes.
