{"id":2517,"date":"2018-08-09T10:54:33","date_gmt":"2018-08-09T10:54:33","guid":{"rendered":"http:\/\/www.happybellyhealth.com\/?p=2517"},"modified":"2024-08-14T10:59:02","modified_gmt":"2024-08-14T10:59:02","slug":"cozy-chicken-and-quinoa-stew","status":"publish","type":"post","link":"https:\/\/www.happybellyhealth.com\/hbh-staging\/cozy-chicken-and-quinoa-stew\/","title":{"rendered":"Cozy Chicken and Quinoa Stew"},"content":{"rendered":"<ul>\n<li>Put all but 1\u20444 cup of chicken broth, chicken breasts, and all dried herbs in a large soup pot.<\/li>\n<li>Cover, heat until boiling, and reduce to a simmer.<\/li>\n<li>Meanwhile, warm olive oil until shimmering in a large saucepan.<\/li>\n<li>To the pan, add vegetables and saute\u0301 until softened yet crispy and light brown on the edges.<\/li>\n<li>Add garlic and saute\u0301 for about two minutes more until garlic is golden brown (be careful not to burn it).<\/li>\n<li>Pour last 1\u20444 cup chicken stock in pan and stir quickly to remove bits from bottom of pan (deglaze).<\/li>\n<li>Add to soup pot.<\/li>\n<li>Remove cooked chicken and chop\/shred into small pieces; return to the pot.<\/li>\n<li>Add quinoa.<\/li>\n<li>Cover and reduce heat.<\/li>\n<li>After 15 minutes, add seasalt and light pepper to taste and the minced parsley.<\/li>\n<li>Stir thoroughly.<\/li>\n<li>Remove about 2-3 cups of the stew and process thoroughly in blender and return to the pot.
