Banana Oat Breakfast Loaf

Ingredients

  • 1 cup plain Greek yogurt
  • 2 ripe bananas
  • 1⁄2 cup applesauce
  • 2 cups oats (rolled or steel cut)
  • 11⁄2 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 1 Tbs cinnamon
  • Optional add­ins: 1⁄4 cup dried fruit, 1⁄2 cup chopped walnuts or pecan
  • 1⁄4 cupshredded coconut

Directions

Preheat oven to 400 F and prepare a loaf pan by lining with parchment paper.

Add all ingredients except for optional add­-ins to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy. Stir in add-­ins by hand.

Pour batter into prepared pan.

Optional: sprinkle additional cinnamon or coconut on top.

Bake for 20 – 30minutes,until the top is set and a toothpick inserted into the middle comes out clean. Allow to cool in pan for ~10 minutes before removing. Store in an air­tight container for up to a week.
