Puttanesca Sauce

Ingredients

  • 3 lbs of fresh tomatoes diced orĀ 4 cans of diced tomatoes (14.5 oz cans)
  • 1/4 cup EVOO
  • 1 tsp oregano
  • 1/8 tsp red pepper flakes
  • 1/2 cup olives (or 1 can)
  • 1/4 cup drained capers
  • 6-8 anchovy fillets chopped (optional)
  • 1/2 cup Italian parsley chopped
  • 4 cloves garlic pressed or minced

Directions

Combine the tomatoes and oil in a skillet. Bring to a boil.
Add the remaining ingredients and cook at reduced heat until thickened.
