Vegetarian Patés

Vegetarian Paté recipes shared by a HBH client:

Ingredients

Marc’s Mom’s Recipe

  • 1 can Leseuer peas, drained
  • 3 medium onions, chopped and cooked in oil until brown
  • 2 hard boiled eggs
  • 3/4 c. walnuts, chopped

 

Joan Nathan’s Jewish Cooking in America recipe:

  • 3 large onions
  • 2 tablespoons veg oil
  • 2 cups green beans (cooked)
  • 1 3/4 cups green peas (cooked and drained)
  • 3 hard boiled eggs
  • 20 salty crackers
  • Salt and pepper to taste

 

*Homemade Mayonnaise

  • 1 Egg Yolk
  • ½ Teaspoon Dijon Mustard
  • ¾ Cup Vegetable Oil (or other neutral-flavored oil)
  • 1 Teaspoon Cider Vinegar
  • 1 ½ Teaspoon Lemon Juice
  • Salt

Directions:

  1. Whisk the egg yolk with the mustard, add oil “drop by drop” at first, whisking continuously until emulsion forms. Then drizzle in the rest of the oil whilst continuing to whisk until the oil is fully incorporated.
  2. Whisk in vinegar and lemon juice.
  3. Taste and add salt as desired.

Marc’s Mom’s Recipe

  1. Blend in Cuisinart—add salt and pepper to taste—add homemade mayo* if not wet enough.

Vegan/Vegetarian/DF

Joan Nathan’s Jewish Cooking in America recipe:

  1. Sauté onions in oil for 20 minutes or until golden.
  2. Combine with all other ingredients in food processor until well processed and smooth. Season with salt and pepper.
  3. Serve with bread, crackers, veggies or matzah! Chill before serving if desired.

How we’ve adapted:

“I combine recipes to taste. I never use canned peas. Only fresh or frozen depending on season. I use walnuts, but not crackers. I use both peas and green beans if I have both or just peas. It’s really a taste thing. The onions and egg are what make it taste like “chopped liver”. Marc loves it!” -HBH client
