Citrus Sesame Kale

Ingredients:

  • 2 tsp sesame oil 
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 bunch kale (about 3/4 lb), tough stems removed and leaves torn into bite-sized pieces
  • 1  1/2 tsp tamari
  • 1 tbs fresh orange juice
  • 2 tsp sesame seeds
  • 1 pinch of red pepper flakes (optional)

Directions:

  1. Heat sesame oil in a large skillet or wok over medium heat. 
  2. Add ginger and garlic; cook for 30 seconds, or until fragrant, stirring constantly.
  3. Add kale and stir until coated with oil. 
  4. Stir in soy sauce and orange juice; cover and cook for 3 minutes, or until kale is softened.
  5. Stir in sesame seeds and red pepper flakes (if using) and serve.
