Pumpkin, Kale, & Pepita Hash

Ingredients

Directions

  • 1 tbsp coconut oil
  • 1/2 cup frozen peas
  • 1 cup steamed broccoli
  • 1 cup pumpkin, diced up in 2 cm chunks
  • Salt to taste
  • 1 tsp cinnamon
  • 1/2 cup pepitas (I used walnuts in the pic first time making this & loved the crunch!!)
  • Handful of coconut flakes
  • Handful or two of kale

Heat the oil in a pan. Add the pumpkin & sauté for 5-10 mins until soft but not mushy.

Add the peas & broccoli & kale & cook for 5 minutes until the peas and kale are soft. Add the cinnamon.

In a saucepan toss the pepitas and coconut together. Hear until the coconut starts to darken.

To serve place in a bowl. Sprinkle over the pepitas & coconut. Enjoy!
