Directions
Preheat the oven to 425°F.
Roast the bones: Arrange them in a single layer on a roasting pan and roast for 30 minutes. Remove the pan and let the bones cool until comfortable to handle.
Reduce oven heat to 325°F. Meanwhile, grease six 4-ounce or four 6-ounce ramekins with a bit of coconut oil.
Extract the marrow: Use a spoon to remove the marrow from the bones and place it in a bowl. Discard the bones.
Blend ingredients: Whisk the eggs and cream into the marrow until smooth. Then, strain the mixture through a fine-mesh sieve into another bowl to remove any lumps.
Season: Whisk in salt, black pepper, and parsley.
Bake gently: Pour the mixture into the ramekins. Place them in a large baking dish, and fill the dish with hot water halfway up the sides of the ramekins. Next, bake for 45 minutes, or until the sides are set but the centers remain slightly wobbly.
Serve warm and enjoy this nourishing bone marrow custard as a grounding, satisfying treat.
