The Best Cashew Cream

Servings: Approx.1½ – 2 cups
Prep Time: 30 minutes
Cooking Time: 5 minutes
Equipment needed: high-speed blender or food processor

Ingredients

  • 1 cup raw, unsalted cashews (can be whole or pieces)
  • 1½ – 2½ cups water
  • ½ tsp salt
  • juice of ½ lemon or 2 tsp apple cider vinegar

Variations:

  • Spicy Chipotle dip: add 1 tsp chipotle adobo
  • Cheesy dip: add 1 Tbs nutritional yeast
  • Cilantro lime dip: add ¼ cup cilantro and sub 1 whole lime for lemon
  • Creamy avocado dip: add ½ avocado and extra salt
  1. Place cashews in large heat-proof bowl or measuring cup. Cover with boiling water and let sit 30-60 minutes (alternatively, you can let covered with room temperature water 8 hours overnight). Cashews are ready when they break apart easily with fingers.
  2. Drain cashews and blend with the salt, lemon or apple cider vinegar and about 1½ cups new water. Add more water as necessary to create consistency similar to sour cream or yogurt. Let blend for 1-2 minutes until very smooth and creamy, adding more water as necessary. Taste for salt. And add more salt or acid as needed.
  3. If making one of the variations add to blender in step 2.
