Lemon Garlic Vinnie

Ingredients
8 Tablespoons cold pressed extra virgin olive oil
6 Tablespoons fresh lemon juice
3-4 cloves garlic, minced
1-2 teaspoons salt
Freshly ground pepper to taste
Variation: Add 2 teaspoons Dijon mustard for a creamier dressing.
Variation: Add 2 teaspoons of lemon zest for a lemony zinger version.
Directions
Put all ingredients in a covered jar, and shake vigorously for 30 seconds.
